Susan Bruce is Managing Director, Poachers Pantry, the Smokehouse Restaurant and Wily Trout Vineyard.
Susan’s career commenced the financial sector in London, then Sydney in the research departments of stockbrokers and merchant banks. Twenty five years ago Susan turned not only her career on its heels but also her grazing property on the outskirts of Canberra by switching from finance to create an on farm country smokehouse. Soon demand grew and Poachers Pantry was born.
The unique range of high quality smoked meats have been well received by the most discerning of customers and have been menu items on both first and business class Qantas and at some of the country’s most awarded restaurants. Following the success of the on farm restaurant, cellar door and farm shop, Susan rebranded and launched the Poachers Pantry retail range Australia wide.
Susan is also the mastermind behind The Poachers Way, a collective of 25 like minded businesses in and around Canberra that are involved in food, wine, art and hospitality.
